With dedication, great ingredients and lots of love, Palace Resorts has come up with the perfect formula to create frozen treats in house, thanks to the expert hands of our ice-cream team.

The ice-cold journey began in 1998 when our first ice-cream machine arrived in Nizuc lobby, joined by the formation of a team who specialized in preparing these sweet treats, led by ice-cream chef, Pedro Pablo Poot. The very first creations which were ‘Made by Palace’ focused on traditional ice-cream flavors and satisfying requests from our guests.

During the following years, the demand for our homemade ice cream was so high that this popular cold dessert earned its very own spot, now in Sunrise, the second lobby of Moon Palace Cancun. Furthermore, another ice-cream plant was established in our Distribution Center, with state-of-the-art facilities and special equipment to create the best ice cream on a grand scale and supply all of our resorts in Cancun and the Riviera Maya.

In addition to these new facilities, our expert ice-cream team began to grow, and is now made up of 9 talented people who ensure each of the 118+ gallons of ice cream they produce by hand every hour are quality assured and delicious.

Our selection of yummy ice-cream options adapts to market trends, seasonal fruits available, and our guests’ preferences, leading to more than 70 different flavors of ice cream that include coconut, chocolate, blackberry and mango, lychee sorbets, hibiscus flower and soursop, among others—plus more than 35 flavors of frozen popsicles. Making ice cream and popsicles in-house opens a range of possibilities for creating unique ice-cream flavors for special events taking place at any of the Palace Resorts properties.

The creativity of our ice-cream makers and the signature flavors they create, such as biscotti, candy floss, tangerine, basil and lime sorbets are a big hit with members and guests alike , as are our cheeky offerings of pineapple and tequila, or mango with eastern spices. Each flavor is made with the finest ingredients to create the best possible experience for all. Every day, our expert ice-cream team works with love and dedication to satisfy the cravings of our guests, their mission being to not only to help them cool off on a hot summer day in the Mexican Caribbean—but to also astonish their taste buds with exceptional flavors.
